Mais attention, tous les pains au levain ne sont pas \u00e9gaux! <\/strong><\/p>\n\n\n\n<p>Rappelons d\u2019abord les bases: pour faire un pain, il vous faut de l\u2019eau, de la farine, du sel et un ingr\u00e9dient pour d\u00e9clencher la fermentation de la p\u00e2te. Cet ingr\u00e9dient, il s\u2019agit g\u00e9n\u00e9ralement de levure de boulangerie ou de levain, parfois m\u00eame d\u2019un m\u00e9lange des deux\u2026<\/p>\n\n\n\n<h2>Le levain, en bref<\/h2>\n\n\n\n<p>Le levain s\u2019obtient en m\u00e9langeant de la <strong>farine<\/strong> et de l\u2019<strong>eau<\/strong> et en laissant travailler les<strong> levures sauvages<\/strong> et <strong>bact\u00e9ries lactiques<\/strong> naturellement pr\u00e9sentes dans la farine et l\u2019environnement ambiant\u2026 Au bout de quelques jours de fermentation, on obtient du levain.<\/p>\n\n\n\n<p>\u00c9l\u00e9ment vivant, le levain frais a besoin d\u2019\u00eatre r\u00e9guli\u00e8rement <strong>nourri<\/strong> d\u2019eau et de farine pour se conserver et survivre. Une technique ancestrale aid\u00e9e par les technologies modernes.<\/figcaption><\/figure>\n\n\n\n<p>Pendant 150 ans, le levain a ainsi quasiment disparu de nos boulangeries&#8230; avant son retour en force et la red\u00e9couverte de ses propri\u00e9t\u00e9s gustatives et de son caract\u00e8re digeste. Avec une diff\u00e9rence majeure&nbsp;: il n\u2019est plus, comme autrefois, syst\u00e9matiquement \u00e9lev\u00e9 par le boulanger. Si bien qu\u2019on peut vous vendre un pain au levain qui n\u2019est pas, dans le faits, fabriqu\u00e9 \u00e0 base de levain \u00e9lev\u00e9 de mani\u00e8re naturelle, mais qui contient du levain en poudre industriel additionn\u00e9 d\u2019am\u00e9liorants par exemple.<\/p>\n\n\n\n<p>En France, par contre, la recette du pain au levain est r\u00e9glement\u00e9e: le terme est r\u00e9serv\u00e9 aux pains qui ne contiennent pas plus de 0,2% de levure, avec un minimum de 20% de levain actif.<\/p>\n\n\n\n<h2>Nos levains: uniquement fabriqu\u00e9s maison<\/h2>\n\n\n\n<p>Chez Une Gaufrette Saperlipopette, nous \u00e9levons nos propres levains (blanc et gris) dans des machines sp\u00e9cifiquement pr\u00e9vues \u00e0 cet usage (Tradilevain).
